Paella is probably the most typical dish from Spain. There is not a
specific set of ingredients to achieve the best results because in every Spanish
region, people use different ingredients. Most people have probably tried
fish paella but you can also find chicken, shellfish, rabbit and a large variety of styles.
The one above was cooked in Stoke Newington (London) so I guess that was a UK paella. Although
to be able to name your dish Paella, it is important to use fat rice (pudding rice) and
saffron, cook it in a flat-thin-rounded pan (from which it takes its name) and add
all the love you can before your guests eat it.
